In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
In a large bowl, cream the butter and brown sugar until light and fluffy.
Beat in the eggs, one at a time, then add the vanilla.
Mix in the sour cream until combined.
Add the dry ingredients and stir just until incorporated.
Fold in the diced apples.
Spread the batter evenly into the prepared baking dish.
Streusel Topping
In a small bowl, combine the brown sugar, cinnamon, flour, and melted butter until crumbly.
Sprinkle the streusel evenly over the batter.
Bake
Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool for at least 15 minutes before serving.
Optional Glaze
Whisk together the icing sugar and milk until smooth. Drizzle over the cooled cake if desired.

Honeycrisp, Ambrosia, and Granny Smith apples all work well in this recipe. Dice the apples into small, even pieces for the best texture. For extra cinnamon flavor, toss the diced apples with a pinch of cinnamon before folding them into the batter. Store covered at room temperature for up to 2 days or refrigerate for up to 5 days.
