Cinnamon Streusel Topping

  • ⅓ cupbrown sugar
  • 1 tspground cinnamon
  • 3 tbspall-purpose flour
  • 3 tbspmelted butter

Optional Vanilla Glaze

  • ½ cupicing sugar
  • 1–2 tspmilk

Instructions

Cake

    Preheat oven to 350°F (175°C). Grease a 9-inch pie plate or 8x8-inch baking dish.

    In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

    In a large bowl, cream the butter and brown sugar until light and fluffy.

    Beat in the eggs, one at a time, then add the vanilla.

    Mix in the sour cream until combined.

    Add the dry ingredients and stir just until incorporated.

Streusel Topping

Melissa's Notes

Honeycrisp, Ambrosia, and Granny Smith apples all work well in this recipe. Dice the apples into small, even pieces for the best texture. For extra cinnamon flavor, toss the diced apples with a pinch of cinnamon before folding them into the batter. Store covered at room temperature for up to 2 days or refrigerate for up to 5 days.

Serving Suggestions: Serve warm with whipped cream and fresh strawberries. Add a scoop of vanilla ice cream for dessert. Enjoy with a hot cup of coffee or tea.
