1. Prepare the Muffins
Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners or lightly grease the cups.
In a large bowl, whisk together the flour, sugar, baking powder, and baking soda.
In a separate bowl, whisk the eggs, melted butter, and vanilla until well combined.
Pour the wet ingredients into the dry ingredients and gently stir just until combined. Avoid overmixing. Fold in the chopped apples.
Divide the batter evenly among the prepared muffin cups.
2. Make the Cinnamon Crumble
In a small bowl, combine the brown sugar, flour, and cinnamon. Cut in the cold butter with a fork or your fingertips until the mixture forms coarse, crumbly pieces.
Sprinkle generously over the tops of the muffins.
3. Bake
Bake at 375°F until the muffins are golden and a toothpick inserted into the centre comes out clean or with a few moist crumbs, about 15–20 minutes.
Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack.
4. Make the Vanilla Glaze
Whisk together the icing sugar, milk, melted butter, and vanilla until smooth. If needed, add another small splash of milk to reach a drizzle consistency.
Once the muffins have cooled slightly, drizzle the vanilla glaze over the tops.
Melissa's Notes
A tart, firm apple works especially well here because it balances the sweetness of the crumble and glaze and holds its texture while baking. Granny Smith is a great choice, but Honeycrisp or Pink Lady would also be delicious.
