Serves
Preheat the oven to 375°F (190°C).
Break or cut the Brie into chunks and arrange in a small, shallow oven-safe baking dish, leaving the rind on.
Nestle the thin pear slices between the Brie, then tuck pieces of prosciutto throughout the dish.
Scatter over the dried cranberries, walnuts and thyme. Add freshly cracked black pepper.
Bake for 15–20 minutes, until the Brie is melted and bubbling and the pear has softened. If the walnuts brown too quickly, loosely cover with foil.
Remove from the oven and drizzle with honey. Top with as much fresh arugula as you like.
Serve immediately, scooping up the melted cheese and toppings with crusty bread or toasted baguette.
Melissa's Notes
Serving a larger crowd? Easily double all the ingredients and use a larger shallow baking dish or two small dishes. Start checking at 15 minutes and bake until the cheese is melted and bubbling. Slice the pear thinly so it softens while the cheese melts. Add the arugula just before serving to keep it fresh.
Per serving based on 4 servings — bread not included. Estimates use 250 g Brie, approximately 45 g prosciutto and a small handful of arugula.
