Serves
Preheat the oven to 375°F.
In a medium bowl, mix the softened cream cheese, ½ cup grated sharp cheddar, and chopped jalapeños until combined.
Gently fold in the well-drained crabmeat, being careful not to break it apart too much.
Season with freshly ground black pepper. Taste before adding salt, as the crabmeat and cheddar may already be salty.
Spoon the mixture into a small oven-safe baking dish and spread it into an even layer.
Using the fine side of a grater, finely grate enough additional cheddar over the dip to completely cover the top.
Bake for 18–22 minutes, or until hot and bubbling around the edges.
Remove from the oven and sprinkle with freshly chopped parsley.
Serve warm with crackers, toasted baguette slices, tortilla chips, or fresh vegetables.
Melissa's Notes
Drain the crabmeat very thoroughly — excess moisture can make the dip watery.
For a milder dip, start with ½ tablespoon of jalapeños. For more heat, work up to 2 tablespoons.
Finely grating the cheddar on top (rather than using shredded) gives you a more even, golden crust.
This dip is best served straight from the oven while it's hot and bubbling.
