Preheat oven to 350°F (175°C). Line muffin tins with parchment paper liners.
In a stand mixer fitted with a paddle attachment, cream together the slightly melted butter and mashed bananas until well combined.
Add the eggs and mix until smooth.
In a separate bowl, whisk together the flour and nutmeg.
Gradually add the dry ingredients into the banana mixture and stir until just combined.
In a small bowl, dissolve the baking soda in the hot water. Add to the batter and mix gently.
Stir in the vanilla extract.
Fold in the blueberries carefully, being gentle not to overmix.
Using a large cookie scoop or ice cream scoop, evenly portion the batter into prepared muffin liners.
Bake for approximately 20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
Allow muffins to cool slightly before serving.
Melissa's Notes
A large cookie scoop or ice cream scoop helps create evenly sized muffins for a more professional bakery-style finish. You can substitute the blueberries with 1 cup of chocolate chips for a sweeter variation. Very ripe bananas will give the muffins the best flavour and natural sweetness. If using frozen blueberries, do not thaw before adding to the batter.
