Prep the Fish
Pat cod fillets dry with paper towels. Lightly brush or spritz both sides with olive oil. Sprinkle Cajun seasoning, salt, and pepper evenly on both sides.
Cooking Options
Pan-Fry: Heat 1–2 tbsp oil in a non-stick skillet over medium-high heat. Add fillets and cook 3–4 minutes per side until golden brown and fish flakes easily.
Grill: Preheat grill to medium-high. Brush fish with a little oil and season with Cajun spice. Grill 3–4 minutes per side until lightly charred and flaky.
Oven-Bake: Preheat oven to 400°F (200°C). Place fillets on a parchment-lined baking sheet. Bake 12–15 minutes, depending on thickness, until fish flakes easily with a fork.
Serve
Serve immediately with lemon wedges. Garnish with fresh parsley or cilantro if desired. Pairs beautifully with roasted vegetables, rice, or a simple salad.
Melissa's Notes
Don't overcook — cod should flake easily but still be moist. Adjust the Cajun seasoning to taste for more or less heat.
