Chow Mein Sauce
Cook noodles according to package instructions. Drain and toss with a little oil to prevent sticking. Set aside.
In a small bowl, whisk together all sauce ingredients: soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, chicken broth, and cornstarch. Set aside.
Heat 1–2 tbsp oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry 3–4 minutes until nearly cooked through. Remove from pan.
Add remaining oil to the pan. Add garlic and ginger; stir-fry 30 seconds until fragrant. Add cabbage, carrot, bell pepper, and green onions; stir-fry 3–4 minutes until crisp-tender.
Return chicken to the pan. Pour in the chow mein sauce and stir until everything is coated and the sauce has thickened, about 1–2 minutes. Add cooked noodles and toss gently to combine.
Serve hot, garnished with extra green onions or sesame seeds if desired.
Melissa's Notes
Peanut oil gives a traditional flavour; coconut oil adds a subtle sweet richness. Cut vegetables uniformly for even cooking. High heat and fast tossing = the best texture.
