Cook
Pat prawns dry with a paper towel and season with salt and cracked black pepper.
Heat coconut oil in a large skillet over medium-high heat. Add prawns and stir-fry until pink and just cooked through. Remove prawns from the skillet and set aside.
Add sesame oil to the same skillet. Add the ginger, chilli flakes, and garlic and cook until fragrant, about 30 seconds.
Add the water, Sriracha, soy sauce, and brown sugar. Increase heat to high and let the sauce simmer, stirring occasionally, until it thickens to a syrup-like consistency, about 2½ to 3 minutes.
Return the prawns to the skillet and toss to coat evenly in the sauce.
Serve
Garnish with toasted sesame seeds and finely chopped green onions.
Serve over steamed rice or as an appetizer.
Melissa's Notes
The sauce thickens quickly once it gets going — keep an eye on it so it doesn't over-reduce. For extra heat, add more chilli flakes or a splash of extra Sriracha. Fresh or fully thawed frozen prawns both work beautifully here.
