Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the fettuccine according to package directions until al dente.
Before draining, reserve ½ cup of the pasta water. Drain and set aside.
Season and Sear the Chicken
Pat the chicken dry and season both sides with the salt, pepper, and Italian seasoning.
Heat the olive oil in a large skillet over medium-high heat.
Cook the chicken for 4–5 minutes per side until deeply golden. The chicken does not need to be fully cooked through at this stage.
Transfer to a plate, cover with foil and set aside.
Build the Sauce
Reduce the heat to medium.
Add the shallot and cook for 2–3 minutes until softened.
Add the garlic and cook for 30 seconds.
Pour in the white wine and scrape up any browned bits from the bottom of the pan. Simmer for 2–3 minutes until slightly reduced.
Stir in the chicken broth, cream, Dijon mustard, Italian seasoning, and red pepper flakes. Bring to a gentle simmer.
Add the Flavour
Add the sun-dried tomatoes and Parmesan cheese.
Stir until smooth and creamy.
Allow the sauce to simmer gently for 3–4 minutes until slightly thickened.
Finish the Chicken
Return the chicken and any accumulated juices to the skillet.
Spoon sauce over the chicken.
Cover loosely and simmer for 10–12 minutes, or until the chicken reaches 165°F (74°C).
Bring It All Together
Remove the chicken and set it aside briefly.
Add the cooked fettuccine directly to the sauce and toss gently until coated.
If the sauce becomes too thick, add a splash of reserved pasta water until silky.
Stir in the fresh basil.
Slice the chicken and arrange it over the pasta.
Spoon extra sauce over the top.
Serve
Finish with freshly grated Parmesan, additional basil, and freshly cracked black pepper.
Serve immediately with warm, crusty bread and a simple green salad.
Melissa's Notes
Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
If your chicken breasts are very large, slice them in half horizontally before cooking.
The sauce should lightly coat the pasta, not become overly thick. A drizzle of the oil from the sun-dried tomato jar adds wonderful flavour.
This pasta is rich, creamy, and full of flavour. The fresh basil brightens the sauce while the sun-dried tomatoes add little bursts of sweetness throughout. It's the kind of comforting dinner that makes everyone ask for seconds.
