Using a small drinking glass or round cookie cutter, cut a circle from the centre of each slice of bread. Set the bread circles aside.
Lightly butter one side of each slice of bread.
Sprinkle approximately ½–1 tablespoon of Parmesan over the buttered side of each slice. Gently press the Parmesan into the butter so it stays in place.
Preheat a non-stick frying pan over medium heat. Add ½ tablespoon of butter and allow it to melt, swirling it around to coat the pan.
Place the bread in the pan with the buttered Parmesan side facing up.
Crack one egg into the centre hole of each slice. Place the reserved bread circles in the pan alongside the toast.
Cook until the egg whites are approximately halfway set and the bottoms of the bread are lightly toasted.
Using a wide spatula, gently flip each piece of toast so the Parmesan side is facing down. Cook for 15–20 seconds, or slightly longer depending on how well done you prefer your eggs.
Carefully flip the toast back over. Turn the bread circles as needed and cook until lightly golden on both sides.
Season with salt and freshly cracked black pepper. Transfer to plates and finish with finely chopped chives and a few drops of chili oil.
Serve immediately while the toast is crisp and the egg yolks are still slightly runny inside.
Melissa's Notes
Chilli oil containing crispy chilli flakes can be found at most supermarkets. Use just a few drops or add more if you enjoy extra heat.
You can also top your Parmesan egg-in-a-hole with sliced avocado or serve it with fresh fruit on the side for a lovely, complete breakfast.
