Cook the jasmine rice according to the package directions. Spread it onto a baking sheet or large plate and allow it to cool completely. For the crispiest results, refrigerate the rice for a few hours or overnight.
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss the cooled rice with the soy sauce, sriracha, and toasted sesame oil until evenly coated. Spread the rice into an even layer on the prepared baking sheet.
Bake for 45–55 minutes, stirring halfway through, until the rice is golden, crispy, and lightly toasted around the edges. Let cool slightly.
Meanwhile, whisk together all of the Maple Ginger Tahini Dressing ingredients until smooth and creamy. Add water, 1 tablespoon at a time, until you reach your desired consistency. If you like a little extra heat, stir in the optional sriracha.
Toast the walnuts in a dry skillet over medium heat for 4–5 minutes, stirring frequently, until fragrant. Remove from the heat and let cool.
Prepare the vegetables by slicing the cucumbers, roasted red peppers, green onions, and avocado. Shred the cabbage if needed.
Divide the crispy rice among four shallow bowls. Arrange the edamame, roasted red peppers, cabbage, carrots, cucumbers, avocado, green onions, and toasted walnuts in colourful sections around the rice.
Drizzle generously with the Maple Ginger Tahini Dressing.
Finish with fresh cilantro, a squeeze of fresh lime, and an optional drizzle of sriracha before serving.
