If using raw peanuts, spread them on a parchment-lined baking sheet and roast at 350°F (175°C) for 10–15 minutes, stirring occasionally and watching carefully to prevent burning. Allow to cool slightly before processing.
Add the peanuts to a mini food processor.
Blend continuously. The peanuts will go through several stages: chopped peanuts → fine crumbs → thick, grainy paste → smooth and creamy peanut butter.
Trust the process! It can take 5–7 minutes of blending before the natural oils release and the peanut butter becomes smooth and creamy.
If desired, add the salt and blend briefly to combine.
For crunchy peanut butter, reserve a handful of peanuts, chop them roughly, and stir them into the finished peanut butter.
Transfer to a clean jar and store in the refrigerator.
Melissa's Notes
Don't panic when it looks dry and crumbly halfway through — keep blending. The magic happens when the peanuts release their natural oils.
Salted peanuts will create a slightly saltier peanut butter, so taste before adding additional salt.
Processing time may vary depending on your food processor.
Natural peanut butter may separate over time. Simply stir before using.
Delicious on toast, in smoothies, baked goods, or straight from the spoon. Makes a lovely hostess gift.
