Blend
In a food processor, combine the lemon juice and tahini. Blend for 1 full minute until creamy and smooth — this step is key to a fluffy texture.
Add the garlic cloves, salt, and cumin. Blend again until fully combined.
Add the drained chickpeas and blend for 1–2 minutes until smooth.
With the processor running, slowly drizzle in the olive oil, then add ice-cold water one tablespoon at a time. Blend for another 2–3 minutes until the hummus is light and creamy.
Chop about 1 tablespoon of fresh parsley and gently mix it into the hummus.
Make It Company-Ready
Spread the hummus onto a shallow plate or bowl, creating a gentle swirl with the back of a spoon.
Drizzle generously with olive oil, dust with paprika, and scatter over chopped parsley and a few whole chickpeas.
Melissa's Notes
Make it the night before — store in a sealed container in the fridge. It thickens overnight, so before serving stir gently and add 1–2 tsp water or lemon juice to loosen. The garlic mellows beautifully and the flavours deepen. This is the secret.
