This Easy Rustic Berry Galette looks impressive but couldn't be easier to make. The homemade pastry is buttery, incredibly flaky, and comes together in just a few minutes in the food processor. Perfect for showcasing fresh summer fruit — I used strawberries, blueberries, and raspberries, but peaches, plums, apples, cherries, or whatever you have on hand all work beautifully.

Prepare the Fruit
In a medium bowl, combine the fruit, sugar, flour, cinnamon, and vanilla.
Gently fold everything together until the fruit is evenly coated. Set aside while you prepare the dough.
Make the Dough
In a food processor, combine the flour, sugar, and salt.
Add the cold butter and pulse 10–15 times, until the butter is about the size of peas.
Add the ice water 1 tablespoon at a time, pulsing briefly after each addition. Continue until the dough begins to clump together and holds its shape when gently pressed.
Turn the dough onto a lightly floured sheet of parchment paper. Gently gather it together into a ball, then lightly pat it into a disc. Avoid kneading or overworking the dough.
Dust both sides lightly with flour, wrap in plastic wrap, and refrigerate for at least 1 hour.
Roll the Dough
Preheat the oven to 425°F.
Transfer the chilled dough to a large sheet of parchment paper that fits your baking sheet.
Lightly flour the dough and rolling pin, then gently roll the dough into a 12-inch circle. It doesn't have to be perfect — galettes are meant to look rustic.
Place the parchment paper with the rolled dough onto a baking sheet.
Assemble the Galette
Give the fruit filling one final gentle stir.
Spoon the filling into the centre of the dough, leaving about a 2-inch border around the edges.
If you're using sliced peaches or plums, you can arrange them in overlapping circles for a beautiful presentation. For berries, simply spoon them into the centre.
Fold the edges of the dough over the fruit, overlapping as you work your way around. If small cracks appear, simply pinch them back together. A galette is meant to have a rustic look, so perfection isn't necessary.
Brush the crust generously with the beaten egg and sprinkle evenly with the coarse sugar.
Bake
Bake for 25–30 minutes, or until the crust is deeply golden brown and the fruit is bubbling.
A little fruit juice may escape while baking — that's completely normal and part of the rustic charm.
Allow the galette to cool for 15 minutes.
Once cooled slightly, dust lightly with icing sugar, then serve with vanilla ice cream or fresh whipped cream if desired.
Melissa's Notes
This dough can be made up to 3 days ahead and kept refrigerated until you're ready to bake.
Keep the butter as cold as possible for the flakiest crust.
Don't worry if your galette isn't perfectly round — the rustic shape is part of its charm.
This recipe is delicious with strawberries, blueberries, raspberries, blackberries, peaches, nectarines, plums, apples, cherries, or any combination of seasonal fruit.
Leftovers are delicious the next day, either chilled or gently warmed in the oven.
