These homemade flour tortillas are soft, flexible, and surprisingly easy to make. Once you try them fresh from the skillet, it's hard to go back to store-bought.

Place the boiling water in a measuring cup and stir in the salt until dissolved. Let cool slightly.
In a large bowl, combine the flour and melted butter with a fork until the mixture resembles coarse crumbs.
Pour in most of the salted water and stir until a shaggy dough forms. Add the remaining water as needed until the dough comes together.
Transfer the dough to a lightly floured surface and knead for 2–3 minutes, or until smooth.
Return the dough to the bowl, cover with a clean kitchen towel, and let rest for at least 20 minutes or up to 2 hours.
Divide the dough into 8 large portions or 10 smaller portions and roll into balls.
Using a rolling pin, roll each ball into a very thin round, approximately 8 inches in diameter. Don't worry if they aren't perfectly round.
Heat a lightly greased skillet over medium-high heat.
Cook each tortilla for about 1 minute per side, or until bubbles form and golden brown spots appear.
Transfer cooked tortillas to a plate and cover with a clean dish towel while you cook the remaining tortillas.
Melissa's Notes
A rolling pin works better than a tortilla press for this recipe.
Roll the dough as thin as possible for the softest tortillas.
Carefully spoon flour into your measuring cup rather than scooping directly from the bag. Too much flour can result in dry, crumbly tortillas.
Store leftovers in a resealable bag for up to 2 days.
Freeze with parchment paper between each tortilla to prevent sticking.
Reheat in a skillet before serving.
