Serves
Brown the Sausage
Heat a cast iron skillet over medium-high heat — no oil needed, the sausage has plenty of fat.
Add farmer sausage slices in a single layer. Cook 2–3 minutes per side until deeply browned and caramelized. Remove to a plate.
Cook the Vegetables
Reduce heat to medium. Add butter to the same pan. Add onion and bell pepper and sauté 4–5 minutes until softened and starting to caramelize.
Add garlic and cook 30 seconds until fragrant.
Return the sausage to the pan and toss everything together.
Scramble the Eggs
Whisk eggs with milk, salt, and pepper in a bowl.
Reduce heat to medium-low. Pour eggs over the sausage and vegetable mixture.
Gently fold with a spatula, pulling the eggs from the edges to the centre. Cook low and slow until just set but still slightly glossy — about 3–4 minutes. Remove from heat while still slightly underdone.
Top with shredded cheddar if using, fresh chives, and a crack of black pepper. Serve straight from the skillet with toast and hot sauce.
Melissa's Notes
Farmer sausage is a Mennonite-style smoked sausage common in Western Canada — look for it at your local butcher or grocery store. It's already cooked, so you're just browning it for flavour and texture. Don't rush the eggs — low and slow is the secret to creamy, never rubbery scrambled eggs.
