Preheat your waffle iron according to the manufacturer's directions.
In a large bowl, whisk together the eggs, milk, melted butter, and vanilla.
Add the flour, sugar, baking powder, and salt.
Stir just until everything is combined. Don't overmix — a few small lumps are perfectly fine and help keep the waffles light and fluffy.
Lightly grease the waffle iron if needed.
Pour the recommended amount of batter into the hot waffle iron and cook until the waffles are golden brown and crisp on the outside.
Serve immediately with your favourite toppings.
Melissa's Notes
We love these waffles topped with fresh strawberries, blueberries, or raspberries, pure maple syrup, whipped cream, or a light dusting of icing sugar.
Don't overmix the batter or the waffles can become dense.
Let the waffle iron fully preheat before adding the batter for the best texture.
Keep cooked waffles warm on a baking sheet in a 200°F (95°C) oven while you finish the batch.
Freeze leftover waffles in a freezer-safe bag for up to 3 months. Reheat them in the toaster for a quick breakfast. The recipe can be easily doubled.
This is by far the best waffle maker I have used — it makes perfectly golden, crispy waffles every single time. Shop it here
