Buttery, flaky scones bursting with fresh strawberries — golden on the outside, tender and soft in the middle. Perfect with a cup of tea or coffee, and honestly just as good plain as they are with clotted cream.

8 scones
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Add the cold cubed butter and use your fingertips or a pastry cutter to work it into the flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining. Cold butter = flaky scones.
In a small bowl, whisk together the cream, egg, and vanilla. Pour over the flour mixture and stir until just combined.
Gently fold in the diced strawberries — don't overwork the dough.
Turn dough onto a lightly floured surface and pat into a circle about 1 inch thick. Cut into 8 wedges.
Place on the prepared baking sheet. Brush tops with a little cream and sprinkle with coarse sugar if using.
Bake for 16–18 minutes until golden brown. Cool slightly on a wire rack before serving.
Melissa's Notes
The key to flaky scones is keeping everything cold and not overworking the dough. If your kitchen is warm, pop the shaped scones in the fridge for 10 minutes before baking.
You can use frozen sliced strawberries as well. Serve warm with butter or a spoonful of my homemade Strawberry Compote for an extra special treat.
