Oven-Baked
After cutting your potatoes into fries, place them in a large bowl of cold water and let them soak for 30 minutes. This draws out the excess starch and is the first step to getting that perfect crispy exterior.
Drain the fries and dry them thoroughly — and I mean thoroughly! I individually dry each fry with a clean cloth or paper towel. The drier they are, the crispier they'll get in the oven. Any moisture left on the fry will steam instead of crisp.
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
In a large bowl, toss the dried fries with olive oil, minced garlic, paprika, cornstarch, salt, and pepper until evenly coated.
Spread fries in a single layer on the baking sheet, making sure they're not crowded. Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
Remove from oven, sprinkle with Parmesan and chopped parsley, and toss gently to coat while warm. Serve immediately.
Air Fryer Option
After cutting your potatoes into fries, soak them in cold water for 30 minutes, then dry each fry individually with a cloth or paper towel — the drier the fry, the crispier the result.
Preheat air fryer to 400°F (200°C).
Toss the dried fries with olive oil, garlic, paprika, cornstarch, salt, and pepper.
Place fries in the air fryer basket in a single layer (cook in batches if needed). Cook for 15–20 minutes, shaking halfway through, until golden and crispy.
Toss with Parmesan and parsley while hot, then serve immediately.
Melissa's Notes
The key to extra crispy fries: soak in cold water for 30 minutes after cutting, then dry each fry individually — soaking and drying thoroughly is what gives you that crispy outside with a soft, fluffy center. Air fryer option: 400°F for 15–20 minutes, shaking halfway. Cook in batches so fries aren't crowded.
