Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Slice jalapeños in half lengthwise and remove seeds and membranes.
Fill each jalapeño half with goat cheese (or your preferred cheese).
Wrap each stuffed jalapeño with a half slice of bacon and secure with a toothpick.
Place on the prepared baking sheet and bake for 20–25 minutes, or until the bacon is crispy and the cheese is slightly golden.
Remove from oven, let cool for a few minutes, and serve warm.
Melissa's Notes
If using cream cheese: let it sit at room temperature for 10–15 minutes so it's soft. Don't overfill — leave a small space at the top. Bake at 400°F for 20–25 minutes, checking around 18 minutes to prevent the cheese from running out. Prosciutto can be substituted for the bacon based on personal preference — it wraps beautifully and adds a slightly more delicate, salty flavour.
