Serves
18–20 bites
Add the chopped carrots to a mini food processor and pulse until finely grated.
Add the quick oats, dates, maple syrup, cinnamon, ginger, salt, and vanilla extract.
Blend until the mixture begins to stick together and forms a soft dough-like texture. If the mixture feels too dry, add 1–2 teaspoons of water or additional maple syrup.
Scoop approximately 1 to 1½ tablespoons of mixture and roll into balls.
Roll each bite in shredded coconut until coated.
Transfer to a parchment-lined tray or container and refrigerate for at least 30 minutes before serving.
Melissa's Notes
Medjool dates give these bites the best natural sweetness and soft texture. For extra carrot cake flavour, add a pinch of nutmeg or allspice. Chopped walnuts or pecans make a delicious optional addition. Store refrigerated for the best texture and freshness. These freeze beautifully for quick grab-and-go snacks. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.
