This bold Cajun seasoning is smoky, savoury and easy to adjust to your preferred level of heat. Use it to season shrimp, chicken, fish, potatoes, rice, vegetables and homemade Cajun-inspired dishes.

Method
Add all the ingredients to a small bowl or jar.
Stir until thoroughly and evenly combined.
Use immediately or store in an airtight container in a cool, dry cupboard for up to six months.
Shake or stir before each use.
How to Use It
Chicken, fish, shrimp or pork: Use 1 tablespoon per pound.
Roasted potatoes or vegetables: Use 2 to 3 teaspoons per pound.
Rice, soup or jambalaya: Begin with 1 to 2 teaspoons and add more to taste.
Cajun butter: Mix 1 teaspoon into 2 tablespoons of softened or melted butter.
Creamy pasta sauce: Begin with 1 teaspoon and adjust to taste.
Melissa's Notes
Use ½ teaspoon of cayenne for moderate heat or the full teaspoon for a spicier blend.
For a smoky variation, replace half of the regular paprika with smoked paprika.
To make it salt-free, omit the salt and season the finished dish separately.
When seasoning shrimp or fish, start with a smaller amount so the spices don't overpower their delicate flavour.
