This homemade chilli seasoning is smoky, savoury and gently warming, with just enough heat to bring a pot of chilli to life. It's easy to adjust and works beautifully with beef, turkey, chicken or vegetarian chili.

Method
Add all the ingredients to a small bowl or jar.
Stir until thoroughly and evenly combined.
Use immediately or store in an airtight container in a cool, dry cupboard for up to six months.
Shake or stir before each use.
How to Use It
Use the entire batch for a standard pot of chilli made with approximately 1 pound ground beef, turkey or chicken, 1 can diced tomatoes, 1 can tomato sauce, and 1 to 2 cans beans.
Add the seasoning after browning the meat and cooking the onions. Stir for approximately 30 seconds to awaken the spices before adding the tomatoes, beans and other ingredients.
Melissa's Notes
This blend seasons one medium-to-large pot of chilli.
For a milder chilli, leave out the cayenne pepper.
For additional smoky flavour, increase the smoked paprika to 2 teaspoons.
If your chilli contains salty broth or canned ingredients, omit the salt from the blend and season the finished dish to taste.
Double or triple the recipe to keep a larger batch on hand. Use approximately ¼ cup per pot of chilli.
