Bright, citrusy and peppery, this homemade lemon pepper seasoning is delicious on chicken, salmon, shrimp, roasted vegetables, potatoes and pasta.

Method
If the dried lemon peel is coarse, pulse it briefly in a mini food processor or spice grinder.
Combine all the ingredients in a small bowl or jar.
Store in an airtight container in a cool, dry cupboard for up to six months.
Shake or stir before using.
How to Use It
Chicken or fish: 1 to 2 teaspoons per pound.
Shrimp: 1 teaspoon per pound.
Roasted vegetables or potatoes: 1 to 2 teaspoons per pound.
Pasta: Sprinkle into butter or olive-oil sauces to taste.
Salad dressing: Whisk ½ teaspoon into your favourite vinaigrette.

Use completely dried lemon peel—not fresh zest—so the seasoning remains shelf-stable.
For a finer blend, pulse all the ingredients together briefly.
Reduce or omit the salt if you prefer to season the finished dish separately.
Add a pinch of cayenne for a spicy lemon-pepper variation.
