Prepare the Beef
Slice the sirloin very thinly against the grain. Toss with cornstarch and soy sauce. Let sit for 10–15 minutes while preparing the sauce.
Make the Sauce
Whisk together soy sauce, broth, brown sugar, oyster sauce, garlic, and ginger. In a small bowl, mix cornstarch with cold water and set aside.
Cook the Broccoli
Heat a large skillet or wok over medium-high heat. Add a splash of oil and cook broccoli for 3–4 minutes until bright green and slightly crisp. Remove and set aside.
Sear the Beef
Add oil to the pan and cook the beef in batches for 1–2 minutes per side until browned. Avoid overcrowding the pan so the beef sears instead of steams.
Bring It Together
Return broccoli to the pan. Pour in the sauce mixture and simmer for 1–2 minutes. Stir in the cornstarch slurry and cook until the sauce thickens and becomes glossy.
Top with green onions and sesame seeds. Serve hot over jasmine rice.
Melissa's Notes
Always use low-sodium soy sauce — it gives you full flavour without the dish becoming too salty. Freeze the steak for 20 minutes before slicing for ultra-thin strips. Don't overcook the broccoli — a slight crunch gives it that takeout texture. A hot pan is the secret to restaurant-style beef.
