Ingredients
Preheat the oven to 375°F. Lightly grease an 8 × 8-inch baking dish.
Pan-fry the sausage links over medium heat, turning occasionally, until browned and cooked through. Transfer them to a cutting board and let them rest briefly before cutting them into thick rounds.
If there is a little oil remaining in the pan, use it to cook the mushrooms. If the pan is dry, add 1 teaspoon or a light spritz of olive oil. Add the mushrooms and sauté for 3–5 minutes, until lightly golden and most of their moisture has cooked away.
Arrange the sausage rounds, sautéed mushrooms and halved cherry tomatoes in the prepared baking dish.
In a bowl, whisk together the eggs, milk, paprika and black pepper. Stir in the chopped spinach and ½ cup of the cheddar cheese.
Pour the egg mixture evenly over the sausage and vegetables. Sprinkle the remaining ¼ cup cheddar cheese over the top, followed by the sliced green onions or finely chopped chives.
Bake uncovered for 20–25 minutes, or until the eggs are set in the centre and the cheese is melted and lightly golden.
Let the breakfast bake rest for 5 minutes before slicing and serving.
