Heat a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spoon as it cooks. Stir in the taco seasoning and cook for another minute until well coated.
Divide the chopped romaine evenly among four serving bowls.
Top each bowl with approximately ½ cup of cucumber, ⅓ cup of cherry tomatoes, ½ cup of chickpeas, one-quarter of the seasoned ground turkey, 2 tablespoons of shredded cheddar cheese, and about ⅓ cup of crushed tortilla chips.
Finish with your favourite toppings, such as fresh cilantro, green onions, jalapeños, avocado, sour cream, salsa, or a drizzle of hot sauce.
Serve immediately while the turkey is warm, or refrigerate and enjoy it later as a cold taco salad.
Melissa's Notes
One can of chickpeas divides perfectly among the four servings (about ½ cup per bowl).
This salad is delicious served warm or cold.
Feel free to customize it with your favourite taco toppings.
Leftover seasoned turkey also makes a great filling for tacos, wraps, burritos, or taco bowls.
**The Hungry Raven Tip:** I love using pickled jalapeños for a little extra tang and heat, but fresh jalapeños are just as delicious if you prefer.
