My go-to house dressing that works beautifully on just about any salad. Tangy red wine vinegar, a touch of maple syrup for sweetness, Dijon mustard for depth, and fresh parsley to bring it all together. It comes together in minutes and keeps in the fridge all week — once you make it, you'll never go back to store-bought.

About ½ cup
Add all ingredients to a small bowl or mason jar.
Whisk vigorously (or shake the jar with the lid on) until fully combined and emulsified.
Taste and adjust — more maple syrup for sweetness, more vinegar for tang.
Use immediately or store in an airtight container in the fridge for up to 1 week. Give it a good shake or whisk before each use.
Melissa's Notes
This dressing is incredibly versatile — it works on green salads, grain bowls, roasted vegetables, and even as a light marinade for chicken. Fresh garlic gives the boldest flavour, but garlic powder is a great shortcut. Fresh parsley brightens it up beautifully, but dried works just fine when that's what you have on hand.
