Serves
Preheat the oven to 375°F (190°C). Lightly grease an 8- or 9-inch square baking dish.
In a large bowl, stir together the rolled oats, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the milk, Greek yogurt, eggs, maple syrup, melted coconut oil, vanilla, and lemon zest.
Pour the wet ingredients into the oat mixture and stir until well combined. Gently fold in approximately 1½ cups of the berries.
Transfer the mixture to the prepared baking dish. Scatter the remaining berries over the top and sprinkle with coarse sugar, if using.
Bake for 35–40 minutes, until the centre is set and the edges are lightly golden. If using frozen berries, the oatmeal may need approximately 5 additional minutes.
Let it rest for 10 minutes before slicing and serving.
Melissa's Notes
You may substitute 3 tablespoons of melted unsalted butter for the 2 tablespoons of coconut oil. Serve warm with Greek yogurt, a splash of milk, or a light drizzle of maple syrup. Store covered in the refrigerator for up to four days. Reheat individual servings in the microwave or warm the covered baking dish in a 325°F oven.
