Rinse and scrub mussels under cold water. Discard any that are cracked or remain open after a tap.
In a large, deep skillet or Dutch oven, melt butter over medium heat. Add chorizo and cook for 3–4 minutes until slightly crisp.
Add onion (or shallots) and garlic; sauté 2–3 minutes until softened and fragrant.
Add diced tomatoes and stir for 1–2 minutes. Pour in white wine and bring to a gentle simmer. Season with salt and black pepper.
Add mussels to the pan and cover. Steam for 5–7 minutes, shaking the pan occasionally, until mussels open. Discard any that remain closed.
For the creamy version: stir in heavy cream and simmer 1–2 minutes to warm through.
Sprinkle with fresh parsley and serve immediately with crusty French bread to soak up the sauce.
Melissa's Notes
Use fresh, high-quality mussels — discard any that smell off or remain closed after cooking. Shake the pan gently while steaming for even cooking. Start with ½ cup cream and add more for extra richness. This dish pairs beautifully with a crisp white wine or a light salad.
