Prepare the Baguettes
Preheat broiler. Lightly butter the split baguettes and sprinkle with garlic powder. Top each half with shredded cheese.
Place on a baking sheet and broil 2–3 minutes until cheese melts and edges just start to toast. Keep a close eye so it doesn't burn.
Cook the Steak & Veggies
Heat 1–2 tbsp oil or butter in a large skillet over medium-high heat. Add sliced onions, peppers, and garlic. Sauté 4–5 minutes until softened and slightly caramelized. Remove from pan and set aside.
In the same skillet, add steak slices in a single layer. Sprinkle with smoked paprika, chili flakes (if using), salt, and pepper. Sear 2–3 minutes per side until browned and just cooked through.
Return vegetables to the skillet and toss with steak for 1–2 minutes to combine flavours.
Assemble & Serve
Divide the steak and vegetable mixture evenly among the broiled baguettes.
Optional: drizzle a little warm beef broth over the filling for extra juiciness. Garnish with parsley if desired.
Melissa's Notes
For a cheesier option, melt additional slices of cheese directly on top of the steak in the skillet before adding to the baguette. Thinly slicing the steak while partially frozen makes it easier and faster to cook. Pairs perfectly with Parmesan garlic fries or a crisp green salad. If you like a little kick, spread a thin layer of hot mustard or Dijon on your baguette before loading it up — it adds a lovely heat that pairs beautifully with the steak and peppers.
