Make the Scones
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a measuring cup, whisk together the egg and cream (or buttermilk). Stir in the pumpkin purée and vanilla extract. Set aside.
In a large bowl, whisk together the flour, baking powder, brown sugar, pumpkin pie spice, cinnamon, and salt.
Using a pastry cutter or your fingertips, work the cold butter into the flour mixture until it resembles coarse crumbs with small pea-sized pieces of butter remaining.
Pour the pumpkin mixture into the dry ingredients and gently stir with a fork until just combined. Do not overmix.
Turn the dough onto a lightly floured surface and gently shape into a circle approximately 10 inches wide.
Transfer dough onto parchment paper and cut into 8 wedges, leaving the circle shape intact.
Optional: sprinkle tops lightly with coarse sugar for a bakery-style finish.
Bake for 20–24 minutes, or until lightly golden brown.
Transfer to a wire rack and cool completely before glazing.
Vanilla Glaze
Whisk together the icing sugar, vanilla, and 2 teaspoons of milk or cream.
Add additional milk as needed until the glaze reaches a thick drizzle consistency.
Drizzle over cooled scones before serving.
Melissa's Notes
Keep the butter very cold for flaky, tender scones. Avoid overworking the dough or the scones can become tough. For extra soft bakery-style scones, chill the shaped dough in the fridge for 10 minutes before baking. A touch of maple extract in the glaze makes these extra cozy for fall.
