This easy crustless quiche is packed with protein, savory sausage, tender spinach, sharp cheddar cheese, and a touch of Dijon mustard for extra flavor. Perfect for breakfast, brunch, meal prep, or a simple weeknight dinner.

  • Light spritz of avocado oil or olive oil
  • Butter for greasing the pie plate

Instructions

    Preheat oven to 350°F (175°C).

    Lightly grease a 9-inch pie plate with butter.

    Heat a skillet over medium heat and lightly spray with avocado oil or olive oil. Add the spinach and sauté for 1–2 minutes, just until wilted. Remove from heat and set aside.

    In a large bowl, whisk together the eggs, heavy cream, and Dijon mustard until smooth and well combined. Season with a pinch of salt and pepper.

    Spread the diced sausage or ham evenly over the bottom of the prepared pie plate.

    Top with the wilted spinach.

    Pour the egg mixture evenly over the sausage and spinach.

    Sprinkle the shredded sharp cheddar cheese and chives over the top.

    Bake for approximately 35 minutes, or until the center is set with only a slight jiggle when gently shaken.

    Allow the quiche to rest for 5–10 minutes before slicing and serving.

Melissa's Notes

If adding vegetables such as mushrooms, onions, bell peppers, or zucchini, sauté them first to remove excess moisture and prevent the quiche from becoming watery. This quiche reheats beautifully and is perfect for meal prep. Feel free to substitute cooked bacon, turkey sausage, or diced ham. Store leftovers covered in the refrigerator for up to 4 days.

Substitution: If using milk instead of cream, use ½ cup milk.
