An easy sheet pan dinner with juicy Italian sausage, crispy roasted potatoes and colourful vegetables, finished with a creamy lemon-Dijon sauce. Simple enough for a weeknight but pretty enough to serve straight from the pan.

Preheat the oven to 425°F convection or 450°F conventional. Line a large rimmed baking sheet with parchment paper, or lightly oil the pan.
Add the potatoes to the sheet pan. Toss with about 1½ tablespoons olive oil, half the oregano, garlic powder and onion powder, and a good pinch of salt and pepper. Arrange them cut-side down and roast for 15 minutes.
Remove the pan from the oven. Add the whole raw sausages, red and yellow peppers and red onion. Drizzle the vegetables with the remaining olive oil and season with the remaining oregano, salt and pepper. Give everything enough room to roast rather than steam. Return to the oven for 15 minutes.
Add the zucchini to the pan, tossing it lightly in some of the oil and seasoning already on the pan. Turn the sausages over. Roast for another 10–15 minutes, or until the vegetables are browned and tender, the potatoes are crisp and the sausages are completely cooked through. For pork or beef sausage, the centre should reach 160°F (71°C); poultry sausage should reach 165°F (74°C). If you want a little extra colour, give everything a 1–2 minute broil at the end, watching carefully.
While everything roasts, whisk together the Greek yogurt, mayonnaise, Dijon, lemon juice, lemon zest, garlic, honey, olive oil and parsley. Season with salt and pepper. Refrigerate until serving.
Let the sausages rest for about 5 minutes, then slice them diagonally into thick pieces. Arrange the sliced sausage back among the roasted vegetables and potatoes. Finish with fresh parsley and cracked black pepper. Drizzle a little Creamy Lemon-Dijon Garlic Sauce over the top and serve the rest on the side with lemon wedges.
Melissa's Notes
Hungry Raven Tip: I would not drown the sheet pan in sauce. A light drizzle over the finished sausage and vegetables will look beautiful, and then put a little bowl of sauce beside the platter. It keeps those gorgeous roasted colours visible and lets everyone add as much as they want.
