Spiralize zucchini into noodles and set aside. Lightly sprinkle with a pinch of salt and let sit 5 minutes; drain any excess liquid.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add garlic and sauté 30 seconds until fragrant. Add shrimp and season with salt, pepper, and a pinch of Italian seasoning. Cook 2–3 minutes per side until shrimp are pink and opaque. Remove from pan and set aside.
In the same skillet, add the remaining olive oil. Pour in the tomato sauce and sprinkle in Italian seasoning, salt, and pepper. Simmer 2–3 minutes until heated through.
Add zucchini noodles to the sauce and toss for 2–3 minutes until just tender — avoid overcooking, they should remain slightly firm.
Return shrimp to the pan and gently toss with zucchini noodles and sauce. Sprinkle crumbled goat cheese over the top.
Serve immediately with fresh basil or parsley if desired.
Melissa's Notes
For extra flavour, add a pinch of crushed red pepper flakes when cooking the garlic. You can swap goat cheese for feta if preferred. This dish works perfectly as a light lunch or dinner — low-carb and full of protein.
