Garlic Butter Shrimp
Sauté garlic in butter over medium-high heat until fragrant, about 1 minute.
Add shrimp and cook just until pink, 2–3 minutes. Season with salt and pepper. Remove immediately from heat.
Pizza
Preheat oven to 400°F (205°C).
Spread pesto generously over the dough or pizza shell.
Scatter sun-dried tomatoes and garlic butter shrimp evenly over the pesto.
Sprinkle Parmesan & Asiago blend evenly over the top.
Add cherry tomatoes and small dollops of goat cheese.
Finish with fresh cracked black pepper.
Bake for 10–14 minutes until the crust is golden and cheese is bubbly.
Rest for 2 minutes before slicing and serving.
Melissa's Notes
The pesto is the biggest flavour variable — use a generous hand. Homemade dough gives a crispier crust; a store-bought shell is faster and still delicious. Don't overcook the shrimp before baking — they'll finish in the oven.
